Shredded Leftover Chicken Sandwich
Turn leftover roasted chicken or turkey into a delicious shredded chicken sandwich. This recipe is also perfect for finishing up Thanksgiving leftover turkey.

Ingredients
2
cup
shredded chicken
foot
long ciabatta bread
cut into 4 equal parts
¼
cup
basil pesto
1
roma tomato sliced
¼
cup
olives sliced
⅓
cup
grated fresh mozzarella cheese
Instructions
Cut open the ciabatta bread and spread basil pesto on both sides.
Place shredded chicken on the bread evenly.
Then top it with some tomato slices and olives. Finish with spreading some fresh mozzarella cheese and cover with the other bread slice.
Toast the prepared sandwich in a preheated
panini maker
or
sandwich maker
until golden brown and the cheese melts.
Serve warm
Notes
You can brush some oil on the outside of the bread to get nice golden brown color after toasting.
Add salt and pepper to the shredded chicken if necessary
