- 1 lb asparagus cut into 2” pieces
- 1 ¼ cup peas
- half lemon
- 2 garlic cloves sliced
- 2 teaspoon cooking oil
- salt and pepper
Instructions
- In a large frying pan or skillet, heat oil on a medium heat.
- Add sliced garlic and fry until golden brown and fragrant.
- Now add the asparagus and peas and saute for a few seconds. Cover and cook on low heat for 5-6 minutes.
- Remove the lid, add lemon juice, salt and pepper. Mix well and serve warm.
Notes
- If the peas are frozen, you may rinse them with warm water to break any lumps and separate them from each other. Preferably, thaw them to avoid lowering the temperature of the hot pan, which might increase the cooking time.
- Whenever possible, use a cast iron skillet to roast the peas and asparagus to get a nice, roasted taste and color.
- You can also add chopped onion to the dish. Just saute it for 1-2 minutes before adding the veggies.
- For some heat add paprika or chili flakes while adding salt and pepper.
