    If this is the only food left on Earth, I am completely sure I can survive all my life with it. I am sooo much crazy about it. Shrimp lovers can understand my feelings.

    A few weeks back I randomly made this spicy tomato shrimp using handy ingredients to go with butternut quinoa risotto. Surprisingly, in my first attempt itself, it turned out so well that I decided to bring it on the blog as well.

    Do you love shrimps too? Then you should definitely try this shrimp in tomato sauce. Trust me, this finger-licking tomato sauce is absolutely irresistible.

    How to make shrimp in tomato sauce

    You will need very few ingredients for this recipe. Probably you can find them in your pantry. In a medium iron skillet cook garlic and tomatoes in olive oil till you get the sauce like consistency. Then add seasonings, white wine vinegar, raw shrimp and cook until well done.

    Serving suggestions

    You can serve this warm sauteed shrimp in tomato sauce with pea pesto pasta or salads or plain rice. Moreover, this garlic shrimp pair really well with this healthy butternut squash risotto or pumpkin risotto or even creamy grits.

    Ingredients

    • 20 jumbo shrimp peeled and deveined
    • 4 roma tomatoes finely chopped
    • 2-3 fresh garlic cloves minced
    • 1 tablespoon olive oil
    • 1 tablespoon white wine vinegar
    • salt and pepper
    • 2 tablespoon fresh chopped parsley
    • ¼ cup water optional

    Instructions

    • Heat oil in medium iron skillet.
    • Add garlic and cook until fragrant for about 30-40 sec.
    • Add tomato and cook for 6-8 min until softens.
    • Then add white wine vinegar, shrimp and cook for 4-5 min
    • Season with salt and pepper according to taste.

    This easiest one-pan sweet potato gnocchi with spinach and sun-dried tomatoes is perfect for weeknight dinners. Homemade gnocchi tossed in with fresh spinach, garlic, sun-dried tomatoes, and parmesan cheese.

    Sweet Potato Gnocchi

    This recipe is in continuation of my last recipe post, which was about making sweet potato gnocchi at home. However, if you are not a fan of sweet potatoes, feel free to use traditional potato gnocchi instead.

    Tushar is a big fan of sun-dried tomatoes. He is crazy about it. And if he gets his hands on them, he can add them to literally any dish you can think of (crazy, right??). I can imagine his love for sun-dried tomatoes as I enjoy them too (:D). So don't be surprised if you find a ton of recipes using sun-dried tomatoes in the blog archive with time. It's just our way of showing love for them. Without further adieu, let's get to the recipe.

    Sweet Potato Gnocchi With Spinach

    If you already have gnocchi prepared, then it's just a matter of 15-20 min to make this dish. Just fry some garlic in olive oil and toss in cooked gnocchi in a nonstick pan. Stir-fry for a few mins. until they get a golden-brown crust. Then add a generous amount of baby spinach, sun-dried tomatoes, and some Parmesan cheese. Saute further for a couple of minutes or until the spinach wilt down.

    Recipe variations:

    • You can use homemade or store-bought traditional gnocchi instead of ones prepared using sweet potatoes.
    • Omit Parmesan cheese or use vegan Parmesan if you are following a vegan diet.
    • For added protein, you can also toss in grilled or cooked chicken breast pieces.

    Ingredients

    • 4 cup gnocchi homemade or store bought
    • 6 oz jar of sun-dried tomatoes drained and sliced
    • 2 cup loosely packed baby spinach
    • ¼ cup grated Parmesan cheese
    • 1 tablespoon olive oil
    • salt and pepper
    • 3-4 quart water

    Instructions

    • Bring water to boil in a large pot. Cook gnocchi in boiling water for a 3-5 minute or until they float on the surface. Drain water and keep it aside.
    • Heat oil in a non-stick skillet over medium heat.
    • Add garlic and saute for 30-40 sec or until fragrant
    • Toss in cooked gnocchi and saute for 4-5 mins. or until they get to a golden brown crust on the surface.
    • Then add baby spinach, sun-dried tomatoes, parmesan cheese, salt, and pepper. Saute further for 2-3 min.
    • Serve warm.

    This healthy and homemade sweet potato gnocchi is prepared using a whole grain flour blend and fresh sweet potato puree. You will never want to buy gnocchi from the stores once you try this.

    Have you ever tried making pasta at home?

    If not, I'd strongly suggest trying at least once to see the difference between store-bought and freshly made pasta. I know sometimes it seems difficult to make staple dishes like pasta, and bread at home. Especially, when they are readily available in the market who would want to go the extra mile in making them at home. That's what I thought until I tried making whole wheat ravioli, healthy fettuccine, and this sweet potato gnocchi at home.

    Homemade pasta brings such a huge difference in the taste of pasta dishes. I can't stress enough how tasty and flavorful they become. Moreover, it is healthy and free from all sorts of chemicals and artificial preservatives. You have full control over what's going in your pasta.

    Don't worry, this gnocchi pasta recipe neither requires a whole lot of your time nor any special skills.

    Healthy Sweet Potato Gnocchi Recipe

    To prepare the pasta dough, combine whole wheat flour, some brown rice flour, and sweet potato puree. I also added some minced garlic to enhance the taste. Knead the dough until it combines well. Divide the dough into 6-8 equal parts and roll into ½ inch thick log. Then, cut the log into 1" pieces to form the gnocchi. Give it any shape you like and cook them in boiling water for a few minutes.

    Once cooked toss them in the sauce of your liking. Or, you can also make stir fry gnocchi with spinach and sun-dried tomato.

    Helpful Tips!

    • To make sweet potato puree (for pasta) at home, either cook them in the microwave or roast them in the oven. DO NOT boil them in water. Boiled sweet potato puree absorbs a lot of water and requires much more flour than normal to make the dough.
    • Use a food processor to combine the sweet potato puree and flour. Pulse for a few seconds and then transfer the mixture onto a flat surface. Using your hands, form it into a dough ball. This way, it takes a lot less effort to make the dough.
    • Use the back of a fork or gnocchi board to give a traditional look to the gnocchi.

    Health Benefits

    The key ingredients of this gnocchi recipe are sweet potatoes, whole wheat, and brown rice flour.

    In addition to simple starch content, sweet potatoes are rich in dietary fibers, complex carbohydrates, and beta-carotene. Beta-carotene is a precursor for vitamin A. It is also a decent source of vitamin C, potassium, and fiber. According to the Center for Science in the Public Interest sweet potato is one the best vegetable you should eat.

    Whole grain-based flours like whole wheat flour and brown rice flour are high in dietary fiber compared to all-purpose flour.

    Ingredients

    • 2 large sweet potatoes (around 1 lb)
    • 1 cup whole wheat flour (plus more for dusting)
    • ½ cup brown rice flour
    • 2-3 garlic finely minced
    • salt and pepper

    Instructions

    • Randomly poke sweet potatoes using a fork at some places. Then cook it in the microwave for 6-7 min or until soft and tender. Allow it to cool for some time.
    • Once cool scoop out the pulp from the sweet potatoes. Add the pulp to a food processor along with all other ingredients. Pulse the mixture until well combined.
    • Transfer the flour mixture to a flat surface and knead into a dough ball.
    • Divide the dough roughly into eight equal parts. Roll each part into ½" log and then cut the log into 1" pieces.
    • Slightly press the gnocchi using finger at the center to give it a pillowy shape. Else use back of the fork or gnocchi board to form the serrations.
    • Cook the prepared pasta in boiling water for 3-4 min or until they start to float on the surface.

    Notes

    1. If you do not have a food processor combine the pulp with other ingredients in a mixing bowl and knead it into a dough using your hands.
    2. Once cooked stir-fry this homemade sweet potato gnocchi with sundried tomato and fresh spinach.

    These days 'fresh from the farm' section in the grocery stores of our town is flooded with fresh corn on the cob. I like shopping from this section because they keep fresh seasonal produce from nearby farms to sell.

    When it comes to fresh corn on the cob, the only thing that comes to my mind is to boil or grill them. This time I wanted to try something different from just eating the kernels. The dish which came to my mind was corn chowder--a perfect soup to enjoy seasonal fresh corns. Isn't it?

    Summer Corn Chowder Recipe!

    For this recipe, you will need fresh corns on the cob, potatoes, onion, garlic, and herbs like thyme and cilantro. Further, you can add fresh carrots and celery to boost its nutritional value. Cook all the veggies, corn, and potato in vegetable stock until tender. Then add half the soup mixture to a blender and blend to a smooth consistency. Add back this cream-like blended soup to the pan.

    Also, I used some cashew cream instead of dairy cream to make this soup more creamy. It tastes great even without adding any cream.

    How to remove corn kernels from the cob?

    • I simply use a knife to cut corn off the cob. It will take some practice to remove kernels without much waste.
    • If you are not confident or are concerned about the safety of using the knife on the hard cob, you can use a corn stripping tool. A variety of tools are available on Amazon for removing corn kernels.

    Ingredients

    • 3 corn ears kernels removed
    • 3 small butter potatoes
    • 2 medium carrots finely diced
    • 1 celery stalk finely diced
    • 2-3 garlic cloves minced
    • 2 tablespoon cashew cream (or ¼ cup dairy cream)
    • 1 tablespoon fresh thyme leaves (1 teaspoon dried)
    • 4 cup vegetable broth (or chicken broth)
    • salt and pepper
    • 1 teaspoon avocado oil (or any cooking oil)

    Instructions

    • Heat oil in a dutch oven on medium heat.
    • Add garlic and saute for 30 sec or until fragrant. Add onion and cook for 3-4 min or until translucent
    • Then add corn, carrot, celery, and potato. Saute them for 4-5 min. Add vegetable broth and bring the mixture to a boil.
    • Add fresh thyme and simmer the soup on low heat for 10-15 min or until potatoes and veggies are tender
    • Take out half of the soup mixture in a blender jar and blend until it gets to a smooth consistency
    • Pour back the blended soup in the pot and mix well.
    • Add cashew cream, salt, and pepper; mix well. Cook for another 5 min.
    • Serve warm as a side or with toasted bread slices or alongside a cheese sandwich for a light meal

    Notes

    1. You can add half and half or heavy cream instead of cashew cream to make it a conventional creamy corn chowder.

    The reason being...

    This salad bowl really is a lazy way of preparing Vietnamese summer rolls or spring rolls. There is no need to wrap the fillings in delicate rice paper wraps. Although I have mastered the art of handling the rice paper wraps for the rolls (as if it is rocket science ), I do end up breaking them quite often while wrapping. It also takes quite a bit of time to do a good job on these rolls. Which is why I have a lazy version of this super healthy and nutritious dish to share with you all!

    Add all the ingredients in a bowl and mix them to prepare the salad. Then add the dipping sauce as a salad dressing. Delicious summer roll bowl is ready without having to use the wrap.

    Helpful Tips!

    • For making cucumber and carrot noodles as I do for this recipe, choose a firm and a bigger/thicker fresh carrots and cucumbers. It will make the spiralizer's job much easier.
    • If you are not using organic cucumber and carrots I would recommend peeling them off to get rid of excessive pesticides and chemicals that are concentrated in the peel.
    • Use brown rice noodles instead of white rice for added health benefits.
    • While purchasing noodles package always look for the ingredient lists to stay away from added chemicals. We always try to avoid packaged food that contains ingredients which do not sound like food.

    Ingredients

    SALAD

    • 8 oz brown rice noodles
    • 20 large shrimps (cooked)
    • 2 large cucumbers
    • 2 large carrots

    DRESSING

    • 1 tablespoon chili garlic paste
    • 2 tablespoon soy sauce
    • 1 teaspoon honey
    • 1 tablespoon vinegar

    GARNISHING/TOPPINGS

    • ½ cup chopped cilantro
    • ½ cup fresh mint leaves
    • 2-3 green onions chopped (optional)
    • 1 jalapeno sliced
    • 1 lemon cut into wedges

    Instructions

    • Cook rice noodles according to package instructions and set aside
    • Cook shrimps for 1-2 min on each side in a non-stick pan on medium heat
    • Peel and cut carrots and cucumber into halves. Then using a spiralizer make them into noodles.
    • In a small bowl or mason jar combine all ingredients listed under dressing and mix well.
    • In a serving salad bowl add some cooked noodles, some cucumber and carrot noodles. Then add the cooked shrimps
    • Now add chopped cilantro, some fresh mint leaves, spring onions and jalapeno slices. Drizzle around 1 tablespoon prepared soy sauce dressing on the top
    • Finally, add a lemon wedge to serve and enjoy this bowl of deliciousness.

    Notes

    1. If you do not have a spiralizer, cut carrots and cucumbers into thick juliennes.
    2. Do not use shrimp if you have seafood allergy. You can use tofu instead.

    Burger Patties

    • 1 lb ground chicken
    • ½ cup baked tortilla chips crushed
    • 1 small onion finely diced
    • ½ red pepper finely diced
    • 1 ½ tablespoon chipotle chili powder
    • ½ teaspoon cayenne pepper
    • 1 teaspoon cumin powder
    • salt
    • 1 tablespoon avocado oil

    For Serving

    • 5-6 multigrain rolls
    • 2 cups choice of greens
    • 1 avocado thinly sliced
    • 1 cup salsa (homemade or store bought)
    • ½ red onion sliced (optional)
    • baked tortilla chips (optional)

    Instructions

    • In a medium mixing bowl combine all the ingredients listed under burger patties (except the oil). Mix well and divide into 5-6 equal parts. Form each part into a roughly ½" thick patty
    • Heat a grill pan on a medium heat. Lightly grease the pan with oil. Cook chicken patties on heated grill for 5-6 min on each side or until well done. You can also cook them an outdoor charcoal or gas grill for extra smokey flavors.
    • Cut burger buns into half and slightly toast them on the grill.
    • Place some greens on one side of burger rolls followed by the grilled chicken patty, some onions, fresh avocado slices. Finally, top with fresh salsa and serve with tortilla chips.

    Notes

    1. You can add cheese as well if you’d like to. Place a cheese slice on the grilled burger patty just before taking it out from the pan.

    Quinoa is a very versatile and healthy grain. Therefore, we use it frequently in our diet. I always keep experimenting with quinoa and try to replace it with white rice whenever possible. These days I am also making quinoa risotto, quinoa fried rice in my kitchen. I have even tried chocolate quinoa bowl for breakfast which to my surprise turned out pretty good!

    Ingredients

    • 1 ½ cup quinoa
    • 3 cup vegetable stock (or chicken stock if not vegan)
    • ½ cup fresh cilantro (plus more for garnishing)
    • 2 tablespoon lime juice

    • 2-3 garlic cloves

    Instructions

    • In a food processor or blender add garlic, cilantro, jalapeno, and pulse it to get the minced texture. Do not over blend and make it into a paste
    • Heat oil in a medium saucepan. Add cilantro-garlic mixture and cook for about a min.
    • Then add quinoa and saute for about 2-3 min.
    • Add lime juice, lime zest, cumin powder and vegetable stock. Bring the mixture to a boil
    • Season with salt and simmer it on low heat for 18-20 min or until quinoa is nice and tender
    • Garnish with some fresh cilantro and lime wedges before serving

    I have been trying to get this recipe online for weeks, to be honest with you guys. However, sometimes some things are beyond your control.

    I had already planned for a photoshoot and gotten everything ready to feature this recipe. While photographing these beautiful-looking stir-fry veggies, I completely forgot about the boiling pasta on my stove. It kept calling me repeatedly (I should have turned on the timer), but I was busy and engrossed in my photoshoot. Disaster struck! My pasta completely turned into a big mess and got consumed by boiling water! And above all, it had to happen on my birthday. What a day it was--I am still recovering from that loss.

    So, lesson learned! Never ever neglect and leave alone your boiling pasta, however beautiful your green veggies look.

    Anyways! let's get back to our recipe. This multicolored veggie pasta salad is very nutritious and quick to prepare. It will hardly take you 30 min or even less to get it on the table.

    How To Make Vegetarian Pasta Salad?

    In a frying pan or cast-iron skillet, saute different colored bell peppers, broccoli florets, and onion together. Season the veggies with some salt and oregano or Italian spice mix for Italian flavors. Toss the sauteed veggies with cooked pasta, sun-dried tomatoes, parmesan cheese, and fresh basil, and there you go--lunch/dinner is ready to serve.

    • Bell peppers are an excellent source of vitamin C and antioxidants.
    • Broccoli contains an impressive amount of vitamin K. It is high in vitamin A, vitamin C, and potassium. Additionally, it contains moderate amounts of dietary minerals such as manganese and vitamin B. It is also loaded with phytochemicals and antioxidants [1].

    Healthy spring rolls are becoming very common on our menus since we began making them for the first time.

    If you are a regular reader of this blog, you might remember that I shared one such recipe for shrimp spring rolls a few months back. You might wonder how this one is any different from my previous recipe. Presenting these Vietnamese vegetarian tofu spring rolls, the taste and flavors are totally different from shrimp rolls and perfect for the meatless menu.

    I liked the concept of making spring rolls. It's like wrapping your salad inside a thin rice paper wrap and dipping it in your favorite dressing. And, you can make it healthy in so many ways by adding greens, carrots, cucumbers, etc.

    How are these vegan tofu spring rolls healthy?

    These healthy vegan spring rolls are prepared using all nutritious ingredients, such as

    • Tofu - is loaded with plant protein. It is a great source of protein for those who don't eat meat.
    • Fresh vegetables like carrot, spinach, and cucumber - these rolls contain nutrients from all these veggies.
    • Brown rice noodles - are relatively high in fiber content compared to white rice noodles.

    How To Make Vegetarian Tofu Spring Rolls?

    Cut tofu into roughly ½" thick and 2" long pieces and toast them on medium heat from all sides. Cut carrots and cucumbers into thick 2-3" long juliennes. Cook brown rice noodles according to package instructions. Also, cut lettuce leaves into small sizes to easily fit inside the rice paper wrap. Or, if you find it difficult to cut them, shred them just like you find in deli sandwiches.

    Wrap all prepared veggies, noodles, and tofu inside the rice paper wrap. Finally, combine some soy sauce, chili garlic sauce, and water to make some spring roll dipping sauce for your rolls. You can find step-by-step instructions below.

    Ingredients

    Filling:

    • 4 oz Brown rice noodles (I used pad thai noodles)
    • 6 thin rice paper wraps
    • 1 cucumber julienned Healthy (3-4" long)
    • 2 medium carrots julienned (3-4" long)
    • a handful of baby spinach
    • 6-8 leaves lettuce

    Tofu:

    • 8-10 ounce tofu (roughly ½" thick and 2" long stripes)
    • 1 teaspoon soy sauce
    • 1 teaspoon vinegar
    • salt and pepper
    • 1-2 teaspoon cooking oil

    Dipping Sauce:

    • 1 tablespoon soy sauce
    • 1 tablespoon chili garlic sauce
    • 1-2 tablespoon water (or vegetable stock)
    • (½ tablespoon fish sauce optional if not vegan)
    • 1 tablespoon finely chopped cilantro

    Instructions

    • In a small bowl mix 1 teaspoon soy sauce, 1 teaspoon vinegar, black pepper, and a little salt. Brush this liquid marinade on tofu stripes evenly.
    • Heat oil in a non-stick skillet or cast iron skillet on medium heat. Add tofu and toast it carefully on all sides until golden brown*. Let it cool for a few mins.
    • Take very warm water in a large flat bottom plate or pan (sufficient enough to dip the rice paper wrap). Dip the wrap in water for about 10-15 sec and spread it carefully on a slightly wet wooden board.
    • Assemble lettuce leaf, some rice noodles, 2-3 cucumber juliennes, 3-4 carrot strips, 5-6 spinach leafs and some cilantro on one side of rice wrap. Then put 2-3 pieces of tofu in line in front of the veggies. Now gently fold the wrap from the veggies’ side once and tuck in both sides of the wrap. Afterward, continue to fold until it reaches and seals the other end of the wrap. Repeat these steps for each roll.
    • Finally, to prepare the spring rolls dipping sauce combine all ingredients listed under 'dipping sauce'. Mix well and serve with fresh homemade spring rolls.

    Notes

    1. *I toasted the tofu in two batches to avoid overcrowding the pan and breaking the tofu.
    2. It may take a little practice to wrap the rolls perfectly without tearing them down when you are making them the first time. Don't panic! If it happens, just use the torn wrap in another rice paper wrap. That's how I fixed them.

    How to rice cauliflower?

    Reducing cauliflower into grainy rice is not difficult at all if you have a food processor. Cut cauliflower into 1-2" size florets and pulse them in a food processor for a few seconds. 

    I have a 12-cup Breville Sous Chef Food Processor that reduced the whole cauliflower (cut into large florets) into rice in a single batch. I love my Sous Chef because it reduces the pain of using it multiple times given its large capacity. So far a great investment :). 

    If you do not have a food processor, you can purchase packaged raw cauliflower rice from local grocery stores. However, I find it a bit expensive given the quantity they sell.

    Ingredients

    • 4-5 cups cauliflower rice
    • 1 cup green beans
    • ½ cup fresh or frozen corn
    • 1 medium onion finely diced
    • 2-3 cloves garlic finely chopped
    • 1 tablespoon olive oil
    • 2-3 springs of fresh thyme
    • 2 tablespoon roughly chopped almonds
    • 2 tablespoon dried cranberries
    • salt and pepper

    Instructions

    • Heat a medium wok or fry pan on medium heat. Add oil, garlic and thyme leaves into the wok and sauté until fragrant for about 30 sec.
    • Then add onions and fry until translucent for about 2-3 mins.
    • Add cauliflower rice, peas, corn and stir fry them on high heat for about 10-12 min. Make sure to not burn the rice. Towards the end of cooking, season with salt and pepper according to taste.
    • Once done turn the heat off and add chopped almonds and dried cranberries. Serve warm as a main meal or on the side.

    Ingredients

    • 1 cup brown rice
    • ⅓ cup cilantro finely chopped
    • 1 teaspoon minced garlic
    • 2 tablespoon lime juice
    • ½ teaspoon lime zest
    • 1 teaspoon avocado oil (or any other cooking oil)
    • 2 ½ cup water (or chicken or vegetable stock)
    • salt and pepper

    Instructions

    • Heat oil in a pot on medium heat. Add minced garlic and sauté until fragrant for about 30 sec.
    • Add cilantro, lime juice, lime zest and brown rice and sauté for 3-4 min.
    • Then add water and bring the mixture to boil. Season with salt and pepper
    • Simmer rice on low heat for about 35-40 min or until rice is tender. 
    • Garnish with some fresh cilantro and lime wedges. Serve warm to enjoy a bowl of cilantro lime brown rice.

    Notes

    • I like the little tangy rice. Add more or less lime juice according to your preference.
    • Check the rice every 5 min. towards the end of cooking. Add a little extra water if necessary to avoid burning and sticking at the bottom of the pan.
    • You can use quinoa and make this Cilantro Lime Quinoa.

    Ingredients

    • 2 cup basmati rice
    • 1 cup green peas
    • 2 pieces medium carrots diced into 1" to 1 ½"
    • 2 cup cauliflower florets (around 1" size)
    • 1 cup green beans
    • 2 large onions sliced
    • ½ cup curd
    • 1 tablespoon lemon juice
    • ⅓ cup chopped fresh mint
    • ⅓ cup chopped fresh cilantro
    • 2-3 green chillies
    • 2-3 cloves garlic minced
    • 1 teaspoon black cumin seeds
    • 2 tablespoon biryani masala (or more if needed)
    • 1 tablespoon avocado oil or any other cooking oil
    • 4 cup water or vegetable stock
    • salt to taste

    Instructions

    • Soak rice in water and set aside for 15-20 min.
    • Heat oil in a large heavy bottom pot on medium to high heat. Add onions and saute them until caramelize (for about 8-10 min).
    • Put black cumin, minced garlic, green chili and cook for about 1 min
    • Add cauliflower, carrots and french beans and saute for 6-8 min
    • Finally add yogurt, lemon juice, green peas and soaked rice: gently mix well.
    • Season the mixture with salt and biryani masala.
    • Add water or vegetable stock and bring mixture to boil.
    • Then add freshly chopped mint and cilantro and simmer the biryani mixture on low heat for about 18-20 min.
    • Serve warm to enjoy this flavorful veg biryani.

    Notes

    • If you are vegan, don't use yogurt. Instead, add 1 or 2 tablespoon extra lime juice to enhance the taste.
    • Biryani tastes really well with spiced yogurt. Season yogurt with salt, pepper and roasted cumin powder to prepare as a side dish to go with biryani (also known as raita).

    • 5-6 cups watermelon pieces (about 1" in size)
    • 2 cups strawberries cut into quarter
    • ½ cup crumbled feta cheese
    • ¼ cup loosely packed fresh basil roughly chopped

    • In a large mixing bowl combine watermelon, strawberries, cheese and basil. Gently mix to avoid breaking the watermelon pieces.

    Recipe Inspiration / Background

    We both are fans of Asian flavors and no wonder I keep trying new asian recipes at home. I am really glad that I started this blog. It gives me an opportunity to explore different cuisines and make new recipes at home trying to prepare a healthy version for guilt-free eating.

    I have always wanted to make Vietnamese spring rolls at home. And, when it is time to make, they have to be healthy (:P). I really loved the concept of spring rolls when I came across this delicacy. Because it can be stuffed with all good things and yet tasty and flavorful. Usually, for the filling, rice noodles are used. However, I used buckwheat noodles to make these rolls more healthy.

    Making spring rolls is very easy. You just have to prepare the raw veggies, cook noodles, sauté the shrimp and assemble them into rice paper rolls. And, it hardly takes 30 mins to prepare them.

    It is an easy recipe, and these homemade spring rolls with shrimp are so delicious that you would want to prepare them again and again.

    How are these healthy?

    These homemade spring rolls are filled with healthy ingredients

    • Shrimps are rich in proteins, iodine, and calcium. It is also high in Omega-3s Fatty Acids. Shrimps are a source of good protein as opposed to red meat (1).
    • Buckwheat noodles are gluten-free and add whole grains into the diet.
    • These spring rolls are filled with raw vegetables like carrot, cucumber, lettuce, etc. and these are high in vitamin A and other micronutrients.

    Ingredients

    • SPRING ROLLS
    • 10-12 large shrimps deveined
    • 1 cucumber julienned (3-4" long)
    • 2-3 small carrots julienned (3-4" long)
    • 3 oz buckwheat noodles
    • leaves from 1 small head iceberg lettuce
    • 1 cup coriander (springs)
    • ½ cup fresh mint leaves
    • 1 teaspoon avocado oil
    • 1 teaspoon soy sauce
    • 10 rice paper wraps
    • salt
    • DIPPING
    • ¼ cup peanut butter (plain)
    • 1-2 tablespoon soy sauce
    • 1 tablespoon chili garlic paste
    • 1 teaspoon corn starch
    • 1 cup water

    Instructions

    • Heat oil in a medium skillet on medium heat. Add shrimp, 1 teaspoon soy sauce and salt if necessary. Sauté the shrimps for about 2-3 min or until well done. Let it cool for about 5 min.
    • Meanwhile, cook noodles according to the package instructions. Once cooked, drain and rinse with cold water to avoid further cooking.
    • Combine all ingredients listed under 'DIPPING' into a small sauce pan. Cook the mixture on medium heat for about 3-5 min or until corn starch is cooked.
    • Cut cooked shrimp into half lengthwise.
    • Take very warm water in a large skillet or large plate. Dip rice paper wrap in the water for 10-15 sec and then spread it carefully on a slightly wet cutting board.
    • Now put lettuce, some noodles, 2-3 carrot juliennes, 2-3 cucumber juliennes, some cilantro leaves, 3-4 mint leaves on one side of the wet wrap. Also, layer 2-3 shrimp halves ahead of veggies leaving some gap in between. Gently fold the rice paper wrap from noodle and veggie side once. Then tuck in the side edges of the wrap and continue to fold over the shrimp and roll until the seam is sealed. Repeat this step for each roll.
    • Enjoy these fresh healthy spring rolls with prepared peanut butter dipping.

    Notes

    • Also, sprinkle some water over the cutting board or flat surface before putting wet rice paper wrap first.
    • Do not dip the rice paper in warm water for longer else it will be difficult to spread it on a flat surface.
    • It may take some practice initially to roll these wraps. Or instead, try this  Vietnamese Spring Roll Salad

    Red Lentil Curry

    Lentil curry is a very common delicacy in Indian households. I would say it is a staple diet for many Indians and is popularly known as Dal. Usually, lentils are cooked separately in a pressure cooker and then added to the curry prepared with onions, tomatoes, and spices. And, it tastes amazing with garlic naan bread or plain rice.

    However, I decided to make this curry in one pot. Do you know why? It becomes very messy inside the pressure cooker (Indian one) after the lentils are done and I absolutely hate washing the cooker. Much to my dismay, my pressure cooker is not dishwasher safe.

    Generally in India, dal is prepared using split pigeon peas (also known as toor dal), red lentils or mung beans, or sometimes a mixture of lentils. In this curry recipe, I used red lentils because it is commonly available in US local grocery stores (I found it in the Mexican aisle).

    These days I am trying to prepare healthy meals that are balanced.  Balanced in the sense that it should contain healthy whole grains, healthy proteins, and vegetables as well. And, that is the goal of this blog. Our goal is to have a balanced diet, not just a low-fat or low-calorie or carb-free diet. Unless we are allergic to certain foods, one should eat healthy carbs, fibers, and proteins from plant and/or animal sources in moderate amounts.

    This time, I am sharing a salmon burger recipe with you. If you look at the ingredients below, you can see that it is prepared using healthy ingredients such as fresh salmon, zucchini, whole wheat bread crumbs, and egg whites.

    Also, I prepared roasted red pepper sauce as an alternative to fat-loaded dressings such as mayonnaise, ranch, etc. And it tastes really good even without adding any cheese.

    This salmon burger is healthy as it is prepared using healthy ingredients

    • Salmon is rich in Protein, healthy fats, Vitamin B12 and Selenium. It is also a good source of Thiamin, Niacin, Vitamin B6 and Phosphorus

    Ingredients

    Zucchini Salmon Patty

    • ½ lb fresh salmon finely minced (or frozen and thawed)
    • 1 large zucchini finely shredded (and squeezed to remove juice)
    • ½ cup whole wheat bread crumbs
    • 1 egg white
    • 1 teaspoon smoked paprika
    • 1 tablespoon avocado oil
    • salt and pepper

    Red Pepper Sauce

    • 2 red peppers
    • 1 medium onion
    • 2-3 cloves garlic
    • 1 teaspoon dried basil (or fresh if possible)
    • 1 teaspoon oil (or oil spray)
    • salt and pepper

    For Serving

    • 6 whole wheat buns
    • leaves arugula
    • 1 large tomato thickly sliced
    • 1 red onion thinly sliced
    • fresh cheese (optional)
    • slices avocado (optional)

    Instructions

    • Preheat the oven to 400 F
    • Line a baking sheet with aluminum foil and spray oil. Place red peppers, onion, along with garlic wrapped in foil to avoid charring and then transfer the baking sheet into the oven. Bake it for 30-40 min. Flip the peppers and onion half way into roasting.
    • Meanwhile in a medium mixing bowl combine mixed salmon, shredded zucchini, breadcrumbs, paprika, egg white, salt and pepper. Divide the mixture into six equal parts and form them into patties.
    • Heat oil in a large iron skillet on a medium heat. Cook the prepared patties for 3-4 min on each side or until well done.
    • Now, peel the roasted red peppers and remove all seeds and the core. Peel roasted onions and garlic as well.
    • In a food processor (or blender) add roasted red pepper, onion, garlic, basil, salt and pepper and pulse until well combined.
    • Now it is time to assemble the burger. On one side of the burger bun, place few leaves of arugula followed by cooked salmon patty, tomato slice, and onion slice. Finally, top with prepared roasted red pepper sauce. Enjoy this healthy salmon burger with your choice of sides

    Easiest one pot chicken biryani

    This easy chicken biryani is a one-pot healthy recipe. It is full of traditional flavors and very easy to prepare. If you like Indian spices and flavors, then you will love this authentic delicacy.

    For quite a long time I wanted to share this one-pot biryani recipe. Somehow every time I ran into various hurdles when taking pictures of this particular dish. Quite often, there was not enough sunlight to take photos. While at other times, I used to forget to purchase fresh cilantro, mint, etc., and so on... Finally, it worked out and I am very excited to share this one-pot easy chicken biryani with you.

    Biryani is our all-time favorite dish. And especially Tushar is a crazy fan of it. He is the one who always prepares Biryani for us. This recipe is an adaptation of his version. Though he prepares biryani in the classic style (which I find a little complicated), this time I asked him to try it in one pot with easy steps.

    What Is Biryani?

    Traditionally, rice and chicken are partially cooked separately and then put together in layers to further cook them until fully done. This partial cooking step is crucial in getting the perfect biryani with fluffy rice and tender, juicy chicken. Some recipes say to cook rice until it is 70% done.

    How one can precisely determine when the rice is exactly 70% done (:P)? I am not very good at this. Therefore, I love simple and easy-to-follow recipes. What is great about this super simple and easy chicken biryani...

    How Is This Easy Chicken Biryani Healthy?

    This one-pot chicken biryani is healthy when compared to its classic version because...

    • It is prepared using skinless chicken thighs or breasts. Chicken is white meat and when used without skin, its cholesterol level reduces significantly.
    • It does not contain added butter or clarified butter which is very common in traditional recipes. Therefore, it is low in fat content.

    Ingredients

    • 1 lb skinless boneless chicken thigh or breast cut into 1-2" pieces (preferably organic)
    • ¾ cup greek yogurt
    • 1 ½ cup long grain basmati rice (preferably Indian variety)
    • 2 tablespoon biryani masala
    • ½ lemon
    • 2 large onions sliced
    • 1 pieces tomato cut into 1" pieces
    • 1 teaspoon minced garlic
    • 1 jalapeno cut into half (optional)
    • 1 ½ cup hot water
    • ½ cup loosely packed mint leaves finely chopped
    • ½ cup loosely packed coriander leaves finely chopped
    • 1 tablespoon cooking oil
    • salt

    Instructions

    • Soak rice in warm water and set aside
    • In a medium mixing bowl add chicken, yogurt, biryani masala, lemon juice, salt and some of the chopped mint and coriander leaves. Mix it thoroughly to coat all chicken pieces with the marinade and set aside*
    • Heat oil in a large dutch oven on a medium to high heat. Add sliced onion and sauté it for about 8-10 min or until they caramelize*.
    • Add minced garlic, jalapeno and marinated chicken. Cook them on medium to high heat for about 10 min.
    • Drain water from the rice completely and add into the chicken.
    • Add remaining mint and coriander leaves, tomato, pinch of saffron and very hot water; mix to combine. Bring mixture to boil and then simmer on low heat for 20 min.

    Notes

    • For more flavorful results, marinate chicken for at least 30 min.
    • Caramelized onions gives nice flavors to the biryani. Make sure the onions are well caramelized.

    Only recently, we have started exploring this healthy grain option. I never had polenta before until I tried this baked polenta recipe that I shared with you a couple of months back.     Ingredients

    • 1 cup instant polenta raw
    • 4 cups water
    • 1 lb boneless and skinless chicken thigh or breast (preferably organic)
    • 2-3 cup mushrooms sliced
    • 1 cup grape tomatoes
    • 1 onion  sliced
    • 1 tbs cooking oil
    • ½ teaspoon smoked paprika
    • ⅛ teaspoon cayenne pepper
    • 1 tablespoon lemon juice
    • salt and pepper
    • 1-2 garlic minced
    • 2 tablespoon finely chopped parsley

    Instructions

    • In a mixing bowl add chicken, lemon juice, salt and pepper. Rub the spice to coat chicken evenly
    • Heat oil in an iron skillet on medium heat. Add chicken and cook it for 5 min. Then flip it over and cook for another 5 min. Once done remove chicken from the pan and put aside.
    • In the same pan add sliced mushrooms, minced garlic, salt and pepper to taste. Stir it for 2-3 min. Then add onions, tomato, cayenne pepper and paprika and, cook further for 6-7 min. Once done turn off the heat and return chicken to the pan. Garnish with parsley.
    • Meanwhile cook polenta in a separate pan according to package instructions.
    • Serve sautéed mushroom and chicken on the bed of creamy polenta.

    Notes

    • Serve polenta when it is still warm to enjoy its creamy texture. Polenta tends to tighten up on complete cooling.

    Ingredients

    • 1 can black beans drained and rinsed
    • ½ cup bread crumbs (I used whole wheat bread crumbs)
    • ½ cup finely diced green pepper
    • ¼ cup quinoa
    • ½ cup water
    • ¼ cup finely chopped onion
    • 1 egg white (optional if vegan)
    • ½ teaspoon smoked paprika
    • 1 teaspoon worcestershire sauce
    • salt and pepper to taste
    • 1 roasted red pepper (divide into 6 part)
    • leaves iceberg lettuce
    • 1 large tomato thickly sliced
    • ¼ onion finely chopped
    • 1 avocado
    • 6 kaiser rolls
    • ¼ cup freshly grated mozzarella cheese (optional for vegan or if want to go cheese free)

    Instructions

    • In a small saucepan, add quinoa, water and bring mixture to boil. Add salt to taste and simmer on low heat for 20 min. with lid on. Meanwhile, start preparing the remaining patty base
    • In a medium mixing bowl pour black beans. Using fork or back of wooden spatula mash beans. Do not make a complete paste but leave some partially broken pieces
    • To the mashed beans, add finely diced green pepper, ¼ cup diced onion, bread crumbs, cooked quinoa, egg white, paprika, worcestershire sauce, salt and pepper to taste. Mix all the ingredients. Divide the mixture into 6 equal parts and then form into patties
    • Heat the skillet on medium heat and add oil to coat the pan. Cook prepared patties for 3-4 min on each side
    • In a small mixing bowl add avocado pulp, finely chopped onion, salt and pepper according to taste. Mash avocado using fork or small beater to combine well.
    • Now assemble the burger. On one side of burger roll place some lettuce leaves, cooked patty, spread some cheese, 1 thick slice of tomato, roasted red pepper. Finally top with avocado sauce and serve with your choice of fries as a side. Enjoy your freshly prepared black bean veggie burger

    • I didn't use cheese on my burger, and it tasted delicious
    • You can also use whole grain based burger buns instead of kaiser rolls

    Ingredients

    • 2 medium zucchini sliced
    • 2 medium yellow squash sliced
    • 1 can chickpea drained and rinsed
    • 1 cup quinoa raw
    • 2 cups organic low sodium chicken stock (or vegetable stock if vegan)
    • 2 teaspoon avocado oil or olive oil
    • 2 cloves small garlic minced
    • 1 teaspoon thyme
    • ½ teaspoon smoked paparika
    • 1 teaspoon roasted cumin powder
    • ½ teaspoon curry powder or garam masala

    Sauce

    • 1 large tomato
    • pulp from half avocado
    • ¼ cup onion finely chopped
    • salt and pepper
    • oil spray

    Instructions

    • Preheat the oven to 400 F. Line a baking tray with Aluminum foil or parchment paper and spray some oil.
    • In a mixing bowl, combine sliced zucchini and squash. Add thyme, garlic, 1 teaspoon oil, salt and pepper according to taste. Mix well and spread the slices on the baking tray. Also, place one large tomato in the tray
    • Then, in the same bowl add chickpeas, paprika, cumin powder, curry powder, remaining oil, salt and pepper. Mix well and spread the mixture on the baking tray*. Transfer the tray into the baking oven. Bake it for 35-40 min. in total. After 20 min. or so, flip the vegetables and stir the chickpeas. Once done turn off the heat and let it cool for few mins.
    • Meanwhile, in a medium sauce pan add quinoa, chicken stock or vegetable stock and bring it to boil. Add salt according to taste and simmer the quinoa on low heat for about 18-20 min.
    • Peel off the skin from roasted tomato, chop it finely and add it to a mixing bowl. Add avocado, onion, salt and pepper. Mash the mixture to combine well.
    • In a serving bowl assemble quinoa, roasted vegetables and roasted chickpeas. Serve with roasted tomato-avocado sauce to enjoy this healthy quinoa bowl.

    Since we started this blog, our eating habits have completely changed. I think it's because of our niche for healthy recipes which contain healthy ingredients and are not limited to any specific cuisine. Therefore, our frequency of cooking Indian dishes has reduced significantly in our kitchen.

    Why am I telling this to you guys?... Tushar was craving Indian food a few weeks back, specifically his favorite lentils with rice (Dal Rice). So poor of him...I didn't prepare Indian-style lentil rice on that day; instead, I tried this lentil and rice salad. And, we got one more option to fall in love with brown rice.

    Ingredients

    • ½ cup brown rice
    • ½ cup whole lentils
    • 2 cup water (or low sodium organic chicken stock or vegetable stock)
    • 1 large cucumber peeled and finely diced
    • ½ cup corn (I used frozen)
    • 1-2 roma tomatoes seeded and finely diced
    • ½ onion finely diced
    • 2-3 tablespoon loosely packed chopped parsley
    • ½ avocado
    • ½ cup skim milk (almond milk if vegan)
    • ½ cup loosely packed mint leaves
    • 1 jalapeño (optional)
    • salt and pepper

    Instructions

    • In a medium pot add rice, lentils and water or chicken stock. Season with salt and pepper and bring the mixture to boil. Then simmer on low heat for about 35-45 min or until rice and lentil are tender. Once cooked, turn off the heat and let it cool for 5-10 min
    • Meanwhile, in a large mixing bowl combine cucumber, corn, tomato, onion and parsley. Then add in cooked rice and lentils and mix well
    • In a blender add avocado, milk, mint leaves, jalapeño and pulse it until blended. Add salt and pepper to taste
    • Enjoy a bowl of healthy brown rice salad with lentils and creamy avocado dressing.

    Notes

    1. If you don't like the flavor of mint, substitute it with cilantro (coriander) instead
    2. You can also serve this salad with some cheese of your choice

    This one pot Mexican brown rice with tomatoes is a great option for any weeknight meals. It is really filling and tastes so fresh. Also, it is loaded with dietary fiber and healthy proteins.

    I have made tomato rice several times before but, the Indian version (would share this one too sometime). We both love it so much. However, this time I wanted to try the tomato rice using brown rice and Mexican spices. Getting into healthy eating habits constantly inspires me to experiment with whole grain based recipes.

    Here is a result of one such experiment. What I love about this rice dish is that it is

    How is this Mexican rice healthy?

    This Mexican brown rice with tomatoes is healthy because

    • it contains whole grain brown rice. Whole grains are rich in dietary fiber
    • it contains black beans. Black beans are the source of good protein compared to meat, especially red meat
    • And it does not contain added saturated fat from butter or cheese. This tomato rice is prepared in avocado oil. Avocado oil is a healthy oil as it contains good saturated fat.

    Helpful tips!

    To prepare this tomato rice, I used fresh tomatoes instead of canned ones. I really like the fresh flavors and therefore, usually, I avoid using processed tomatoes unless there is an emergency. However, you can use canned tomatoes if you want to.

    One Pot Mexican Brown Rice

    Ingredients

    • 1 cup brown rice uncooked
    • 4 fresh tomatoes chopped
    • 1 can black beans drained and rinsed
    • 1 onion chopped
    • 2 cloves garlic minced
    • 2 teaspoon Mexican chili powder
    • 1 teaspoon curry powder
    • 1 teaspoon cumin powder
    • salt and pepper
    • 1 teaspoon cooking oil (I used avocado oil)
    • 1 ½ cup chicken stock low sodium organic (or vegetable stock for vegan)
    • 2-3 tablespoon finely chopped parsley (for garnish)
    • 1 roma tomato seeded and sliced (for garnish)

    Instructions

    • Clean the brown rice using water and set it aside by soaking it in water.
    • Heat oil in a large pot on medium heat. Add minced garlic and saute until fragrant.
    • Add onion and saute until translucent
    • Add in tomatoes, seasonings including chili powder, curry powder, cumin powder and mix well. Cook tomatoes until tender for about 4-5 mins.
    • Then add chicken stock (or vegetable stock if vegan) and bring mixture to boil.
    • Drain all the water from rice and add it to the tomato mixture.
    • Simmer the rice (covered) for about 35-45 min or until tender. After 20 min add in black beans and continue further cooking. Cooking time will depend upon the variety of brown rice and how tender you prefer your rice.
    • Turn off the heat. Garnish with some chopped parsley and sliced fresh tomato. Serve warm to enjoy this bowl of healthy Mexican brown rice.

    Notes

    • You can also boil chicken or veggie stock in a separate pan while cooking tomatoes. It will reduce some cooking time.
    • This Mexican brown rice can also be paired with fresh fresh guacamole and some cheese and can be served as a side dish or as a main dish

    A few weeks back, I shared with you guys a recipe for making whole wheat naan bread at home. I am very happy to tell you, that this is the most viewed recipe on this blog to date. The other day when I was analyzing my google analytics, I realized that Google is also showing this naan bread recipe for the keyword "what to eat with naan". This implies people are looking for various options to eat with naan bread. You can imagine that this inspired me to make these healthy vegan naan wraps.

    If you have leftover naan bread, these wraps will be ready in less than 20 minutes. You can also use premade wraps instead of naan if you don't have time to make homemade naan. And the fillings of these wraps are so flavorful that will taste wonderful even with soft tacos or tortillas.

    These vegan wraps are healthy because:

    • the base for these wraps is whole wheat naan bread.

    Ingredients

    • 4 whole wheat naan bread homemade or store brought
    • 1 roma tomato seeded and sliced
    • ½ red onion sliced
    • lettuce leaves of your choice
    • 1 can chickpeas drained and rinsed
    • 1-2 clove garlic minced
    • ½ teaspoon cumin powder
    • ½ teaspoon curry powder (or garam masala if you have)
    • ¼ cup fresh parsley leaves
    • 1 teaspoon avocado oil or cooking oil
    • salt and pepper

    DRESSING

    • ½ avocado (or more)
    • ½ cup loosely packed fresh mint leaves
    • ½ cup plain non-fat greek yogurt optional
    • ½ teaspoon cumin powder
    • ½ cup almond milk (or regular dairy milk)
    • 1 jalapino (optional)
    • salt and pepper

    Instructions

    • Heat oil in a pan on medium heat. Add garlic and toast it for few sec or until fragrant.
    • Add rinsed chickpeas, cumin powder, curry powder (or gram masala), salt and pepper. Toast the mixture on low heat for about 5-7 min. Let it cool for few min
    • Until chickpeas are cooling down, transfer all the ingredients listed under dressing. into a blender. Mix until you get a smooth consistency.
    • Place bread on a flat surface. Put some chickpeas, sliced onions, sliced tomatoes, parsley and lettuce leaf on the bread surface.
    • Drizzle some mint avocado dressing over chickpea fillings. Carefully wrap the bread. Enjoy these vegan wraps for any meal, dinner or lunch

    Notes

    • If you love dark green color in the dressing then add some fresh parsley or cilantro while blending the dressing ingredients.

    This healthy and easy turkey chili has everything in it to enjoy. It is so comforting and filling. This chili is prepared using ground turkey, red kidney beans and brown rice. A warm bowl of this chili is perfect for cold nights.

    I always try to find ways to include whole grains into our diet. And while experimenting with this recipe, I added brown rice to chili and I can say for sure that it did not let me down with my experiment. Thats how this Easy Turkey Chili with Brown Rice is born. By the way you, could also prepare this using Bulgur Wheat and it turns out delicious too. 

    How easy it is! Because again it is a one pot meal. I am sure you will agree with me, that one pot meals are so convenient and less messy to prepare. Perfect for weeknight dinners. Isn't it? The only downside of this dish is its cooking time. Brown rice usually takes quite a bit of time to cook. Otherwise, this dish would be ready in under 30 mins. if you use Bulgur Wheat.

    Ingredients

    • 1 lb ground turkey
    • 1 can red kidney beans drained and rinsed
    • ½ cup brown rice
    • 3-4 large tomatoes chopped
    • 1 onion chopped
    • 2-3 cloves garlic minced

    • 2 cups water
    • 2-3 tablespoon Mexican chili powder

    • Next add ground turkey and using a spatula separate the meat. Cook it until the pink color disappears
    • Add chili powder, cumin powder and mix well.
    • Add in tomatoes and cook for about 3-4 min or until tender
    • Now add rice, beans chicken stock, water and bring the mixture to a boil
    • Cook for about 35-45 min. or until rice is tender. Serve warm to enjoy this easy turkey chili.

    • You can also use ground beef or ground chicken instead of turkey
